I really loving my new Hungry Girl cookbook. Last night I made Chicken Cordon Blue. It was awesome! And only 5 points for a 5 oz. piece of chicken. It was so easy to make too.
Take a 5oz or so piece of chicken, pound it flat with a meat tenderizer. Use a 1/2 wedge of Laughing Cow Swiss light and spread it on the chicken. Add a few pieces of 98% fat free ham. Roll up and use a toothpick to hold it together. Bake at 350 for 20 minutes covered with foil and then take the foil off.
tip: Do not use "Party Toothpicks" as I did. The dye cooked into the chicken, oops.
